Many people argue that because white chocolate does not contain the natural cocoa solids in cocoa liquor, it is not truly “chocolate” at all. Whether you agree with this or not, however, you should know what to look out for when buying white chocolate online or at your local grocery store. White chocolate that comes from the cocoa liquor is usually made by using vegetable fats or vegetable oil, and does not contain any cocoa butter. It also does not contain any cocoa powder and does not contain any natural coloring. If you want chocolate that is good for you, check out this type of chocolate, which has been manufactured in a healthier way.
Once you have decided to buy a product that is made from cocoa butter, keep in mind that white milk chocolate is usually not as high in fat as black chocolate. This means that you will have to choose wisely.
The good news is that white milk chocolate is also very easy to melt. Just like other types of chocolate, you can easily melt white milk chocolate by just stirring the melted chocolate until it reaches a liquid state.

Melting White Chocolate Chips
To keep the white milk chocolate cool, keep it in a freezer bag or container. Keep it there until you are ready to serve it to your friends or family. If you’re entertaining a large group, it is best to freeze your white chocolate in individual serving containers.
Another way to get the white milk chocolate completely chilled is to use a double boiler. However, if you’re unsure about how to put it in the boiler, use an ice bath so that you can help the chocolate to get into the boiler and chill faster.
One thing that is very important for you to do is not the chocolate. You should always leave enough room to let the chocolate completely melt, and chill.
When you are ready to serve your white milk chocolate, you will need to have a container with lidded tops on it. It is best to use plastic wrap to keep your chocolate in, because the plastic tends to retain heat better than the foil that is used for wrappers.
Next, fill the plastic wrap with about halfway up the sides of your container. This will help the chocolate to stay in and keep it from melting, while keeping the container from touching the sides.
After your white chocolate has been frozen for about 45 minutes, you can take it out of the plastic wrap. and remove the gelatine or filling from inside of the wrapper.
Once you have removed the gelatine or filling, you will then need to pour the white chocolate into the container with the gelatine or filling in. It is best to pour it into the center of the container, because it tends to be cold when it is still solid.

Gelatine and milk are sometimes combined to give white chocolate an oatmeal taste, butterscotch or caramel taste, which is why it is called butterscotch. Make sure to add one tablespoon of each to every two ounces of white chocolate in order to get the desired taste.

White chocolate is one of the best ways to dress up a simple dessert. It also adds delicious flavor. There are several different ways to melt chocolate. Melting it in the microwave is my favorite because it’s so quick, but it can be a bit more finicky (especially with white chocolate).
Best Chocolate For Melting in 2020
- Ghiradelli melting wafers – These are my personal favorite because they are so easy to use and taste delicious! You can melt them in a microwave-safe bowl and they always have a smooth finish. I usually melt half a package at a time and heat at 50% power for 1 minute. I stir and then melt another 30 seconds. Stir again and repeat if needed.
- Wilton candy melts – I love using these as well if I’m looking to use a certain color. The red is perfect for the holidays.
- Almond bark – This is another great option if you’re looking for a substitute for white chocolate. You will chop the bark and then proceed to melt.
- High-quality chocolate (such as Ghirardelli or Bakers) – Just simply chop it and then proceed to melt.
- Couverture chocolate – This is a little fancier chocolate with a high percentage of cocoa butter. You will chop and then proceed to melt it.
- Chocolate chips – If you’re desperate, you can use chocolate chips, but you wont get as smooth of a finish (if you’re using the chocolate for dipping strawberries or truffles), especially with white chocolate chips.
Microwave Method to Melt White Chocolate
- Place the chocolate in a microwave-safe bowl.
- Microwave for one minute at 50% power.
- Stir and then microwave (at 50% power) in 15-second increments, stirring until smooth.
If you’ve tried to melt it on numerous occasions, I’m sure you’ve found that sometimes it works, and sometimes it turns into a thick, gloppy, unusable mess. It’s hard to melt white chocolate over a double boiler because you have less control over the temperature. So, we turn to the microwave. I learned this method from Batter and Dough and it works perfectly every time:
Place white chocolate in a microwave-safe bowl (glass is best, ceramic is also fine). Microwave at very short intervals of 10-15 seconds each, depending on the strength of your microwave. Stir between every interval. Keep melting and stirring until white chocolate is smooth. Do not try to melt the white chocolate faster.

And we’re done! Smooth, silky, creamy white chocolate. Perfectly melted. Every time. Note that every microwave is different and yours can take less or more time.
Does brand matter? It may. This chocolate is Schmerling’s Choco Blanc but I’ve also had success with Elite’s white chocolate and Alprose. Camille Bloch should also work fine.
STOVETOP Method to Melt White Chocolate
You can also melt chocolate in a double broiler if you have one. You could also use a metal bowl or tempered glass bowl if it will fit on your pan. This is the best method if you are melting chocolate chips because it is less likely to burn.
- Add 1″ of water to a sauce pan and bring to a light simmer.
- Place the double broiler over top (making sure it doesn’t touch the water). Then pour in the chocolate.
- Stir occasionally and cook over the heat until it has all melted. Then remove from heat.
Melting white chocolate can be a little harder, as it is easy to burn and turn clumpy. So be sure to keep an eye on it and continue stirring until it melts. If it ends up getting a little too clumpy, try adding a little bit of shortening or butter until it thins out and becomes creamy. More Helpful Tips
- Make sure to use dry tools. It only takes a drop of water to ruin the chocolate.
- Don’t rush the melting process. If you try to turn the heat too high to melt it faster it will burn and turn grainy.
- Once it is mostly melted, remove from the heat. Then you can stir until the last few pieces melt.
- Adding a Tablespoon of shortening before melting – it will give it more of a smooth and shiny finish

Candies: Candy truffles are one of my favorite desserts to make, especially around the holidays. I love to make all different types using melted chocolate, like cookie dough truffles and brownie truffles.
Fruits: My absolute favorite fruit to coat with melted chocolate is strawberries. There seriously isn’t anything better. You could also coat other fruits like cherries, bananas, apples and more.
Cake and cookie Balls: It’s so fun to make chocolate-coated cake and cookie balls, like cake pops, Oreo balls and sugar cookie balls. They make the perfect bite-sized treat and are so delicious.
Cookies: Chocolate-dipped or drizzled cookies look so much fancier and also have delicious flavor! Some of my favorite cookies to coat are my gingerdoodles, strawberry cookies, Oreo’s and rolo pretzel sandwiches.
Drizzling: Drizzled chocolate looks so pretty and adds the perfect amount of sweetness! I love to drizzle it on top of turtle chex party mix, Reese’s pretzel bites, strawberry kabobs and popcorn.
